Yes, you read it right - a self-proclaimed watermelon critic creating a watermelon tea! Life indeed is full of delicious ironies.
This refreshing concoction was inspired by my journey to the beautiful island of Bali, Indonesia, last summer. Recipe: Refreshing Summer Melon Tea With A Twist
Ingredients:
4 cups of fresh watermelon juice (preferably seedless)
4 cups of brewed tea (black tea or green tea would work well, depending on your preference)
Juice of 2 limes
A handful of fresh mint leaves
Honey or agave nectar to taste
1/2 teaspoon of vanilla extract (surprise ingredient #1 for a subtle aromatic flavor)
A pinch of pink Himalayan salt (surprise ingredient #2 to balance and enhance the sweet flavors)
Optional: Chia seeds for garnishing and adding a healthy twist.
Tips: Add 1/2-1 cup of pineapple juice with lemon juice to taste. Also add more mint and even substitute mint for Basil or use both.
Instructions:
Begin by brewing your tea. Allow it to steep to your desired strength, then remove the tea bags or strain out the loose tea leaves. Let it cool.
In a blender, blend your fresh watermelon until it becomes juice. Strain it to remove any leftover pulp or seeds.
In a large pitcher, combine your watermelon juice, cooled tea, lime juice, and fresh mint leaves.
Add honey or agave nectar to sweeten to your liking. Stir well until it's well combined.
Stir in the vanilla extract and pink Himalayan salt.
Allow the mixture to chill in the refrigerator for at least an hour. This will help all the flavors to meld together.
Before serving, give the tea a good stir, then pour into glasses filled with ice. Garnish each glass with an extra sprig of mint and a sprinkle of chia seeds, if desired.
