Conquering Seafood: How I Fell in Love with Grilled Fish and Lemon Herb Butter

Confession time, dear readers: I've never been the biggest fan of fish. But that all changed this summer when I discovered a recipe that would not only change my mind but make me crave fish! Today, I'm excited to share this game-changing recipe: Grilled Fish with Lemon Herb Butter.

So, what magic ingredients turned this fish skeptic into a fish lover? Here's what you'll need:

  • 4 salmon fillets (You can substitute with any fish you enjoy)

  • 3-4 garlic cloves (1 clove for the butter marinade)

  • 1/2 cup of butter

  • 1 lemon

  • 1/4 cup each of fresh dill, rosemary, and parsley

  • Salt and pepper to taste

  • 1/2 cup red onion

  • 1 tablespoon of olive oil

The journey began with sautéing the fresh herbs and red onion in a tablespoon of butter until they softened, filling my kitchen with an irresistible aroma. The earthy smell of the herbs softened my hesitation about the fish, hinting at the wonderful meal that lay ahead.


Next, I seasoned my salmon fillets with salt and pepper, then layered lemon slices on top, followed by my fragrant herb mixture. The fresh and zesty lemon slices added an unexpected freshness that, I found, beautifully balances out the robustness of the fish.


Before grilling, I coated my dish with a slick of olive oil. Then, onto the medium-high heat grill went the fish for about 4-6 minutes on each side. Cooking it just right is crucial - a lesson I was about to learn.

In a small saucepan, while my salmon was becoming deliciously charred, I melted the remaining butter. To this, I added minced garlic and lemon juice. This lemon herb butter was about to become the star of the dish.


The final act was simple yet transformative: I drizzled this zesty, aromatic butter over the grilled fish. And there it was - Grilled Fish with Lemon Herb Butter, a dish that won over my fish-wary palate!

I never imagined that I'd be preparing fish for dinner regularly, but here I am, already excited for the next seafood adventure.
